How to Prepare:

Dice the potatoes into small pieces. Set aside. Heat a sauté pan over mediumhigh heat and add 2 tsp of oil. When the oil is hot, add the potatoes and season with salt and pepper. Cook for 8 to 10 minutes until tender. Keep warm.


Meanwhile, heat another sauté pan over medium-high heat. Remove chicken from packaging and pat dry with paper towels. Add 1 tbsp of oil to the pan and once hot, add the chicken and sear for 1 to 2 minutes on both sides. (Cook until internal temperature of chicken reaches 165˚F)


Add the saffron tomato sauce to the pan and heat for 2 to 3 minutes until heated through.


Evenly distribute the chicken with saffron tomato sauce and potatoes between plates.
